Dashi is the stock upon which most Japanese recipes are built.

Ingredients: (for 2 or 3 servings)
(a) 2 chicken breasts
(b) white miso(sweet miso)
brown miso (salty miso)
cream cheese
kochujan(Chinese spicy miso paste)
mirin(sweet sake)
white wine 1 tablespoon

In a food processor, blend these and add 1 ounce chopped leek to mix.

Directions:
1. Preheat oven to 480 degrees F.
2. Cut chicken breasts into bite-size and lay them on iron plate.
3. Bake in the oven for about 8 minutes.
4. Place the mixture (b) on top of each baked chicken piece.
5. Bake again for about 6 minutes until the sauce turns brown.
